Congee is a rice meal that looks like rice porridge or soup. Although congee is Asian food, it is eaten across the globe by both adults and children because of its nutritiousness, deliciousness, and ease of preparation with just a few ingredients.

step 1: Rinse the rice with warm water, drain the water, and place the rice in your pot
step 2: Add about 9 cups of water and set the cooker on low heat and cook for about 30 min
step 3: Add your fish, oil, salt, chopped tomato, and continue cooking it for 10 min
step 4: Add your chopped broccoli and allow it to cook for about 2-5 min
step 5: Stir it to ensure that the consistency is what you need, otherwise, add more water, or let it cook to dry up a bit before serving

Step 1: Rinse the rice with warm water, drain the water and place it in your rice cooker bowl and add more water to cover the rice more than when you’re cooking your usual rice
Step 2: Add your fish, oil, salt, chopped tomato and cook for about 25mins
Step 3: Stir the congee to see the consistency. The rice should be properly soaked in water and not too runny with excess water. At this stage, if it’s too thick you need to add a little water
Step 4: Add broccoli and leave it to cook for about 2-5mins
Step 5: Stir it and it’s ready for consumption

Step 1: Rinse the rice with warm water, drain the water and place it in your rice cooker or pot ,add about 5 cups of water, and allow it to cook
step 2: After about 5mins when the rice starts boiling, add your fish
step 3: Allow it to cook and remove your fish from the boiling rice after about 3mins, debone, shred, and return it to the pot.

Congee could be prepared in numerous ways, either by using a rice cooker or gas cooker. It could also be made by adding a wide variety of ingredients depending on who is eating it (this is dependent on age). The fascinating thing about congee is that, if prepared well, it could be served to babies as a stage two or three food, especially if other ingredients are added to it. Otherwise, just ordinary rice puree could be served as a stage one food(4-6months). Besides, if you are preparing it for an adult, you might need to add other ingredients such as pepper, spring onions to achieve your satisfactory taste.  

This food is loved and accepted by babies because of its texture and taste. I was not aware of it until a friend recently introduced it to me. So, when I prepared and served it to my son, the boy could not stop reaching out for more. 3.0 Things to note:  

In preparing congee, rice is necessary. But other ingredients could be replaced. For example, some people prefer to use spinach in place of broccoli, chicken in place of fish, or others might not even add tomatoes to it. Personally, I love using these three ingredients because of their nutritious values and the fact that my baby loves it this way.   

Another thing you need to have in mind is the type of rice that you are using, whether it soaks water easily or faster. If you are using left-over cooked rice, then you would need to reduce the cooking time.  

Always get rid of the tomato seeds and ensure you remove all the bones in the fish before adding it to your baby’s congee. This is to prevent your baby from being choked. You could as well add a pinch of salt if your baby is up to one year old.   

   

4.0 The recommended type of rice to choose for your congee  

As simple as congee is, it’s not all kinds of rice that are recommended to be used especially if you want to achieve a perfect consistency. I usually recommend people to go for starchier rice like jasmine or japonica long and medium-grain rice, respectively. Alternatively, if you are in Asia, you could get some good starchy Chinese rice that could easily soak water. Most brown and basmati rice does not have enough starch in them to achieve that silky gel texture that is needed in congee meals, so they aren’t recommended for this kind of meal.  

7.0 How to store your rice congee for later use  

Scoop the required quantity into your baby’s storage bags or containers, seal them properly and store them in the fridge for about three to four days or in the freezer for about two to three months.

  • Rice is rich in carbohydrate, which provides energy for your baby and aid in proper brain function. Rice is also a good source of vitamins and minerals that promote good metabolic activities in the body.  
  • Tomatoes are rich in potassium, folate, vitamin C, and K.  
  • The potassium in tomatoes helps in preventing heart disease, while the folate ensures normal tissue growth and cell function. Vitamin C is an important antioxidant, and vitamin K is essential for bone health and blood clotting, which are vital to baby’s growth  
  • Broccolis are a useful source of fibre and antioxidant that promote good digestion and bowel movement  
  • Broccolis are also reliable sources of vitamin C and calcium which promote a good immune system, bones, oral, and dental health  
  • Most fishes like salmon and sardine are loaded with omega-3 fatty acids that are great for baby’s brain. They help to reduce the risks of many diseases. These grades of fish contain vitamin D, protein, iodine. A high-quality protein is important to child’s health needs
